Bitter Melon Bitters Pudding

Bitter Melon Bitters™️, All Natural Pudding, keto and vegan friendly

Dry Ingredients

  • 1/4 cup bitter melon leaves, crunched finely 
  • 1/4 cup chia seeds 
  • 1tbsp Milk Thistle seeds
  • 1 tbsp Fennel seeds
  • 1 tbsp Cinnamon 
  • 1tbsp Fenugreek seeds 
  • 1 tsp of Agar powder
  • 1 tsp of sea salt

Utensils

  • Whisk
  • Pan
  • Mixing bowl 
  • Spatula 
  • Measuring cups 
  • Coffee grinder
  • Mould
  • Plate
  • Sift

Wet Ingredients 

  • 1/2 cup of fresh squeezed lime or lemon juice 
  • 2 tbsp of Monk Fruit liquid or 1/4 cup of Monk Fruit sweetener 
  • 1/2 cup of coconut milk
  • 3/4 cup of water  

Procedures 

  1. If using whole seeds, use a grinder to grind the chia, fennel, fenugreek, and milk thistle seeds, Grind  finely.
  2. Mix  seeds, bitter melon leaves and cinnamon together with lemon juice in a mixing bowl.
  3. Using a small pan, mix the water and agar together well and bring it to boil. Bring the pan to a medium heat for 2 to 3mins  till it thickens, whisking constantly.
  4. When the agar is thick, sift in the sweetener. Whisk  constantly till it dissolves, about 1 to 2 minutes.
  5. Add in lemon and the seeds mixture, stir well. If it is too stiff, add extra 2 tbsp of water to ease it out smoothly.  
  6. Add in coconut milk and stir. If it is too thick, add extra one tbsp of water at  a time. Make sure it is smooth but not too liquid.
  7. Remove from heat and let it chill.
  8. Pour in a mould. Put in refrigerator for at least 2 hours.
  9. Take it out and flip it upside down on a plate or dish.
  10. Chill it again uncovered.
  11. Served with chilled coconut milk or cream and dust with a dash of cinnamon.
